Deadfire gives the different races a nice amount of reactivity, but there's no race that gets like a whole race-specific questline or radically different experience of the game. I don't have any particular suggestions for starting class, but I'll try to answer some of your other questions and then come back to it. That said, I bet there are a whole lot of satisfying characters in this game.

I would not play a tank (they seem boring and Eder is plenty good) or ranged martial DPS (Maia is a great character and excellent in the role). Basically, some combination of damage caster, debuffer, offtank, and/or melee DPS seem like the good protagonist fits with how combat works and the companions the game gives you. I bet there's some Barbarian/Chanter melee nut that's pretty fun to play, too. Wizard because they're always fun and satisfying to play in these games, and Aloth is a wet blanket Monk because it seems like a high-mobility, high-micro class that isn't redundant with any of the other companions. If I were starting fresh, and I wanted to be someone else, I think I'd do a single-class Pale Elf Wizard or Monk. The class takes a lot of micro, but I don't mind that for an MC, and having all the damage records feels like a good fit for the protagonist-as does being the one dashing around blasting people out of stealth while your partymembers stick together. RPing as someone who reveres Berath and who cares about the sanctity of the Wheel more than the tragedy of individual death has been rewarded in some really surprising, satisfying ways. I'm sure a lot of possible main characters feel this way, but Cipher/Rogue Death Godlike has felt like a really, really good fit for the game, both in terms of minute-to-minute dialogue options and overarching plot stuff.
